Why Ember & Root

Grown with care, cooked with love

Every ingredient tells a story of the land around us. We believe good food starts long before it reaches the pan.

🌱

Seasonally Sourced

Our menu changes with the seasons. We work directly with local farms within 60 miles to bring you the freshest ingredients at their peak.

🍷

Natural Wines

A thoughtfully curated selection of natural, biodynamic, and low-intervention wines from small-production estates.

🔥

Wood-Fire Kitchen

Our open hearth brings primal warmth to every plate — slow embers, live fire, and the unmistakable depth of smoke.

🤝

Community Rooted

We host monthly dinners with local makers, farmers, and artists — because food is always better when it brings people together.

We Are Ember & Root

A restaurant born of a belief that food, at its best, is inseparable from the land, the season, and the people who tend both.

Our Story

Rooted in place, inspired by season

Ember & Root opened in 2019 in a converted Victorian bakehouse in the heart of the city. We wanted a restaurant that felt like neither a special occasion nor an afterthought — just a beautiful place to eat well, any night of the week.

Head chef and co-founder Nadia Holt grew up helping her grandmother preserve summer fruit and dry herbs for winter — an upbringing that shaped a philosophy: cook with what the land offers, and offer it with care.

Our team sources directly from over a dozen farms, foragers, and artisan producers within 60 miles of our kitchen. The menu changes every few weeks, sometimes every few days, following the rhythm of what's ready to be eaten.

The hands behind every plate

Our small, passionate team brings decades of collective experience and a shared love of honest cooking.

Nadia Holt

Nadia Holt

Head Chef & Co-founder

Trained at Le Cordon Bleu Paris and River Cottage, Nadia's cooking is rooted in British seasons with a French soul. She picks herbs from our roof garden each morning.

Marcus Webb

Marcus Webb

Sous Chef

Marcus spent three years on a farm before culinary school — an experience that gives his cooking a depth of understanding few chefs possess.

Lena Fuentes

Lena Fuentes

Sommelier & Co-founder

Lena's natural wine list is an education in itself — low-intervention producers who farm with as much care as we cook.

Tom Shaw

Tom Shaw

Pastry Chef

Tom's desserts are architecture and poetry simultaneously. His seasonal tarts have been described as the best in the county — and we're not arguing.

What we stand for

Principles we cook by

These aren't marketing words — they're the decisions we make every day, from supplier to plate.

🌿

Seasonal First

Never imported, never out of season. If it's not at its best, it's not on our menu.

♻️

Zero Waste Kitchen

Vegetable trimmings become stocks. Bread becomes breadcrumbs. Nothing leaves this kitchen wasted.

🤝

Fair to Farmers

We pay our producers fairly and on time. Good food requires good relationships.

🌱

Climate Considered

We track our carbon footprint and offset what we can't yet reduce.
